This recipe came from Jeanie Gain.
2-1/4 cups flour
1/2 cup confectioner's sugar (aka powdered sugar)
1 cup margarine
6 tbs. lemon juice
1 tsp. baking powder
2 cups granulated white sugar
Melt the margarine. Mix 2 cups of the flour, the confectioner's sugar and the margarine. Pat into a 9" × 13" pan. Bake at 350°F for 20 minutes.
Beat the eggs. Put the eggs, lemon juice, baking powder, white sugar, and the last 1/4 cup of flour in a mixing bowl. Mix well and pour over crust. Bake at 350°F for 25 minutes.
Sprinkle with confectioner's sugar. Let cool.
