12 lb Idaho or red potatoes, peeled & soaked in water. Mix in 4000 mg of Vitamin C (to prevent darkening)
2 medium onions (not sweet or Vidalia), minced
2 lb bacon, medium dice
8 large eggs, whipped
1 can evaporated milk
1 tbs coarsely ground black pepper
1 lb smoked ham, finely chopped
2 sticks butter
Additional 4000 mg Vitamin C (prevents darkening of potatoes)
Instructions
Preheat oven to 425°F.
Grease pan thoroughly with one stick of butter.
Saute onions in one stick of butter without browning. Cool.
Fry bacon until translucent. Cool.
Grate potatoes. Mix in 4000 mg powdered Vitamin C (ascorbic acid).
Thoroughly mix potatoes, eggs, bacon (with grease), ham, onions, pepper and evaporated milk.
Pour into pan and bake at 425°F for 1 hour. Reduce heat to 325°F and bake for about 1 hour, checking with fork in center. When the fork comes out clean, it's done.
Serve with sour cream. (Angioplasties and coronary bypasses are optional.)
Vegetarian Version
Mix grated potatoes and onions.
Eliminate bacon, eggs, ham, butter and evaporated milk.
