There are a number of chocolate beers out there, but they don't all contain chocolate in them. Some just contain chocolate malt, which is not chocolate at all, but a malt which has been roasted to a dark brown. I wanted to make sure everyone knew that this was a REAL chocolate beer, so I named the beer after the manufacturer of the cocoa I used, Hershey's. This recipe is based on Paul's Chocolate Porter found in the Cat's Meow 3.
Ingredients
1.5 kg John Bull dark malt extract
1.5 kg John Bull amber malt extract
1 lb Belgian chocolate malt
4 oz Hershey's cocoa
1 lb dextrose (corn sugar)
1 oz Cascade hops (bittering)
1 oz Cascade hops (flavoring)
1 pkt British Ale yeast (Wyeast 1098)
Instructions
Mix dextrose with 2 cups water. When dextrose is dissolved, add cocoa. Boil for 5 minutes. Set chocolate syrup aside.
Put chocolate malt in bag and place in 1.5 gallons cold water. Bring water to a boil. Remove bag, drain, and throw out malt. Add extracts and chocolate syrup. Bring back to a boil. Add bittering hops. Boil for 60 minutes. During last 2 minutes of boil, add flavoring hops.
Put 2 gallons of cold water in primary fermenter. Pour hot wort into primary. Cork and let cool to 77°. Pitch yeast.
