These take a bit of messing around, but not too bad. This was originally Aunt Jean's recipe.
Ingredients
1/2 cup butter
1/2 cup brown sugar
1 egg yolk
1 cup flour, sifted
1 tsp vanilla
1 egg white, beaten
1 cup pecans, chopped
jelly (I prefer raspberry or currant)
Instructions
- Cream butter and sugar.
- Add egg yolk.
- Add flour.
- Mix well.
- Add vanilla.
- Make small balls of batter.
- Dip in egg white.
- Roll in chopped nuts.
- Place on cookie sheet and press down center before you put in oven.
- Bake at 300°F for 10 minutes.
- Press center down again and bake 10 more minutes at 350°F. (Yes, the baking temperature is different.)
- Put tart jelly in center after they come out of oven and before they cool.
